BASIC POTATO LATKE RECIPE
Chanukah, the Festival of Light, is among the most widelycelebrated of Jewish holidays. It is a time for happy familygatherings around the menorah, for children's songs, a delicious sizzling potato latke and games of "dreidel." For many of us, it brings back fond memories of childhood, or serves to renew our sense of Jewish identity.Because of the great significance of oil in the story of the Chanukah miracle, it is traditional to serve Hanukkah food cooked in oil. Among the most popular Hanukkah foods are these Hanukkah recipes for delicious Potato Latkes.

Hanukkah Recipes
Traditional Potato Latke or Potato Pancake
* 5 large potatoes, peeled * 1 large onion * 4 eggs * 1/3 cup matzo meal * 1 teaspoon salt * 1/4 teaspoon pepper * 1/3 cup oil for frying
Applesauce and sour cream for topping Grate potatoes and onion on the fine side of grater, or in food processor or through blender with a little water added to it. Hand grating is more work but gives the best results. Place the grated potatoes in a colander with a plate beneath it. Sprinkle salt on the potatoes, then cover them with a layer of paper towels. Place a heavy object, such as a heavy bowl or can, on top. Allow the potatoes to drain for 10 minutes.
While the potatoes are draining, peel and grate the onion. Pat the potatoes dry with paper towels. Add grated onions and eggs and mix well. Add matzo meal and seasoning and mix well. Heat oil in a large frying pan over medium high heat until very hot but not smoking.Add mixture one tablespoon at a time into frying pan, flattening with a spatula. Fry the latkes until golden brown and crisp on both sides.Drain the latkes on paper towels, patting them with the towels on both sides. Transfer in a single layer to a baking sheet and keep warm in the oven until all of them have been made. Serve potato latke hot, with applesauce and sour cream. For a delicious variation, add two or three grated zucchinis to the potato mixture.
