Passover Matzoh
Matzoh, also known as matzah or matzo is is a cracker-like unleavened flatbread made of plain flour and water that has not been allowed to rise. There are five grains that may not be used during Passover in any form except matzah: Wheat, Barley, Spelt, Rye, and Oats.
Shmura Matzoh
Shmura ("guarded") matzah is made from grain that has been under special supervision from the time it was harvested to ensure that it has never come into contact with water and no fermentation has occurred. Shmura matzoh is usually handmade and round - made with the intention of using it to fulfill the commandment of eating matza on the first night of the Passover Festival.
The Festival of Matzoh
Matzah is eaten during the eight day Passover Festival which is also known as the "Festival of Matzah." We are commanded to eat matzah on the first night of the Passover Festival, during the Passover seder meal, and to rid ourselves of chametz -- all bread and leavened food products -- for the entire eight days of the Passover holiday. This important commandment offers us great insight into the true nature of liberation.
Matzoh of Humility Chametz of Arrogance
The difference between leavened bread and matzah is obvious: whereas bread rises, the Pesach matzo is not permitted to rise at all. Our Rabbis explain that the "puffed up" nature of chametz symbolizes the character trait of arrogance and conceit. The flat, unleavened matzah represents utter humility.Humility is the beginning of liberation, and the foundation of all spiritual growth. Only a person who can acknowledge his own shortcomings and submit to a higher wisdom can free himself from his own limitations. On the Passover Festival, we are forbidden even the minutest amount of chametz - we should rid ourselves from the arrogance and self-centeredness from within our hearts. By eating the Passover matzah, we internalize the quality of humility and self-transcendence that is the essence of faith.

Keep this in mind during your extensive cleaning preparations for the Passover Festival. While we diligently search for chametz in our homes, we can just as diligently search for any arrogance in our souls.
